We checked out the Lighthouse Cake Co. because they had their pumpkin cheesecake back for the fall season. Who can pass on a fall favourite while supporting a local business.
The Lighthouse Cake Co. is owned and operated by Vikki Smith, a Red Seal Certified baker. She took over the bakery from Joy and Lindsay Funk in 2018 when she was only twenty-three! Even though Vikki is a young bakery owner, she is running a successful and strong business in the Langford community. Vikki and her team also appeared on Project Bakeover Season 1 Episode 3 “A Light in the Dark”. We watched the episode on OptikTV. Vikki and I actually met may years ago back in our university days at Vancouver Island University. We lived on the same floor in our dorm building. When I learned that she had her own bakery I had to check it out. I remember her bringing samples back from baking class that she would share with the people on our floor. It is awesome to see people you know accomplish amazing things.
They offer a variety of staple and custom options to fit everyone’s needs. You can order custom cakes as well has fancy wedding cakes. That being said, you are able to pick gluten free, dairy free, and egg free options. Some options may need additional lead time so call ahead to make sure you won’t miss out.
While we were there, there were way to many options of treats that we wanted to try. We had preordered our pumpkin cheesecake, but also picked up some sausage rolls, and two cookies. Next time I want to try some of the tarts and their Raspberry Decadence as it is said to be one of the local favourties.
