Who doesn’t want to learn family recipes to pass down? We tried out Grandma’s Keto Salad at home because it has been a long time since we were able to travel and have a family dinner at her house. 2021 is looking a bit better now that the vaccine is rolling out, but BC is still on a health order to not socialize with anyone outside your household until February. When we can travel again we will be going to visit family.

Ingredients:
4 1/2 cup Broccoli & Cauliflower mix
8 Slices Bacon
1/4 cup Slivered Almonds (optional)
3/4 cup Mayo (we used Miracle Whip)
1/4 cup Sour Cream
3 tbsp Apple Cider Vinegar
1/4 cup Red Onion
1 tbsp sugar
salt and pepper to taste

Dressing
Combine sour cream, apple cider vinegar, mayo/Miracle Whip, onion, sugar, salt and pepper together in a bowl. Taste and add more sugar, salt, or pepper if you feel the need. Grandma uses a sugar substitute and normally uses 2 tbsp. She recommends letting the dressing sit for 30 minutes before combining.

Salad
Chop broccoli and cauliflower into bite size pieces.

Cook bacon. Chop into small pieces.

Chop slivered almonds into a crumble.

Once everything is ready, combine in a bowl. Make sure to evenly distribute the dressing so that you do not end up with a mouthful of just dressing. Refrigerate after making.

We did notice a difference in taste making it with Miracle Whip versus mayo. It still tasted delicious! This super simple salad is a great dish to bring to a bbq or to have on hand when you need something quick to take with you to work.
